How can I prevent a cheese cake from splitting on top while baking?

Splitting comes from cooling too quickly.





Let cool in the oven. Turn oven off, and let sit in oven.... later on, crack door, let it sit.... when finally room temp, refrigerate.How can I prevent a cheese cake from splitting on top while baking?

Don't overbeat your batter--this will incorporate unnecessary air into it which will escape during baking, causing cracks.





Bake the cheesecake in a water bath to keep the oven moisture high and the heat gentle. (A water bath is using a larger pan containing water in which to place the smaller cheesecake baking pan. Place the cheesecake pan in the larger pan, then pour some warm water into the larger pan until it's about halfway up the cheesecake pan.)





Don't overbake!





MOST IMPORTANTLY, grease the sides of your cheesecake pan. Cracking is primarily caused by the cheesecake sticking to the sides of the pan, so greasing it will prevent the batter from sticking as it bakes and cools.





If you've followed all these steps and there are still cracks, pour a nice sauce (strawberry, perhaps?) on top of each slice, or cover with whipped cream.

That's caused from over cooking.
One thing you can do is be sure that when putting the cake together prior to baking, the ingredients are all firmly patted into the cooking dish. sometimes air pockets can form inside, and if they are still there when the cooking process begins, they could cause cracking in the cakes surface. It won't hurt the taste, just the appearance.
Instead of making a baked cheesecake try Jello's no bake cheesecake it's great and always comes out perfect.
I did not know you baked a cheese cake, but I'am not a cook.
over baking can cause that.


I have noticed when I'm baking cheesecake, it's done before I think it is. They will still be a little soft when you take them out and continue to cook for a bit after you remove them from the oven.


Sometimes it helps to put a pan of water in the oven while you're baking the cake too.
Do not overbeat your ingredients, as too much air will cause splitting later. Also, when cake is still a bit soft in the middle towards the end of baking, turn off oven and let it finish and cool. Opening the oven door helps, too. If all else fails and it splits, put on a nice topping and no one will ever know!
